Thanksgiving Countdown: Fried Bacon Mashed Potatoes

Mashed potatoes are a Thanksgiving favorite of mine. They are simply awesome. There are two things you can do to make them even better. First, add bacon (duh). Second, stuff them in a loaf of bread!

  • 3lbs yukon gold potatoes (peeled and cubed)
  • kosher salt
  • 6 tbsps of butter
  • 1 shallot
  • 1.5 cups of heavy cream
  • 0.5 cup of sour cream
  • 4 pieces of fried bacon
  • 3 tbsps of chives
  • ground black pepper
  • salt
  • 1 toasted loaf of artisanal bread

  • 630 calories
  • 47g of fat (29g saturated)
  • 580mg of sodium
  • 42g of carbs
