Mashed potatoes are a Thanksgiving favorite of mine. They are simply awesome. There are two things you can do to make them even better. First, add bacon (duh). Second, stuff them in a loaf of bread!
- 3lbs yukon gold potatoes (peeled and cubed)
- kosher salt
- 6 tbsps of butter
- 1 shallot
- 1.5 cups of heavy cream
- 0.5 cup of sour cream
- 4 pieces of fried bacon
- 3 tbsps of chives
- ground black pepper
- salt
- 1 toasted loaf of artisanal bread
