Thanksgiving Countdown : Bacon-Cornbread Stuffing

The best food holiday of the year, Thanksgiving, is right around the corner. A second helping of this holiday staple couldn’t be more acceptable. On this day most people ignore their worries about fats and calories. This is YOUR day to take charge of your weight gain. What better way to maximize your calorie intake than some good ol’ Bacon-Cornbread Stuffing?

  • 1 pan cornbread (8-inch square), cut into 1/2-inch cubes
  • 8 slices white sandwich bread, cut into 1/2-inch cubes
  • 4 slices bacon, cut into 1-inch pieces
  • 1 small yellow onion, diced small
  • 2 stalks celery, diced medium
  • 2 cloves garlic, minced
  • 1 tablespoon finely chopped fresh sage leaves
  • 2 large eggs, lightly beaten
  • 2 3/4 cups chicken broth
  • 1/2 cup chopped fresh parsley
  • Coarse salt and pepper
